1 cup almond meal (or other nut meal)
¼ cup desiccated coconut
2 tbsp cacao powder
2 tbsp coconut oil
3 tbsp honey (or to taste)
1 tbsp vanilla bean paste
2 tbsp Spirulina powder
Optional: extra cacao nibs, coconut filaments, chopped nuts (macadamia, pistachio…) or seeds to decorate
Mix all the ingredients together in a bowl. The mix should be dry enough to handle but moist enough to stick together without crumbling.
Using hands, form 12 small balls.
If you like, roll the balls in chopped cacao nibs, nuts, seeds or coconut filaments for a more sophisticated finish.
Freeze for 15 minutes and enjoy.
Best kept in the fridge until ready to serve.
