Guacamole Recipe with Garlic Kelp

minutesThis guacamole recipe with garlic kelp is easy, simple and extremely healthy. The kelp adds beautiful umami flavour and nutrients, especially iodine which is helpful if you have low thyroid function. This is the perfect healthy snack, year-round. The kelp is a good substitute for salt; with less sodium and more of the other minerals that we need.
Ingredients
2 ripe avocados, halved, stone removed and peeled
1/2 red onion, finely chopped
1 red birdseye chilli, seeds removed & finely chopped (alternatively use Tabasco sauce to taste)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp Garlic Kelp Seasoning
1/4 cup fresh coriander leaves, chopped
2 tbsp lime juice
freshly ground black pepper
Corn chips to serve
Directions
- Toast the cumin & ground coriander in a shallow pan over medium heat until aromatic (about 1 minute).
- In a bowl, mash the avocados until smooth, add all the other ingredients and combine well.
- Serve with corn chips.
Notes
- You can substitute lemon kelp for garlic or if you prefer a little spice, try chilli kelp.
