Healthier Banana Bread Recipe with Sea lettuce

hourThis healthier banana bread recipe with sea lettuce will offer a soft flavour and is iron rich and iodine rich, thanks to the addition of sea lettuce.
Ingredients
2 large ripe banana’s (mashed)
1/2 cup honey or maple syrup
1/3 cup coconut oil (melted)
2 eggs
1/4 cup of milk (any preference)
1 tsp baking soda
1 tbsp vanilla essence
1/3 cup coconut oil (melted)
1 tbsp sea lettuce
1/2 tsp salt
1 1/2 flour (wheat flour or standard)
1/2 tsp cinnamon
1/4 cup chocolate chips (optional)
Directions
- Preheat oven to 170 degrees and oil a 9×5-inch loaf pan.
- Whisk the egg, coconut oil, vanilla essence, honey together in a large mixing bowl.
- Add in the mashed banana and milk. Using a spatula or bigger spoon stir in the sea lettuce, salt, baking soda, cinnamon and flour until combined. Be careful not to mix.Â
- Fold in chocolate chips (optional)
- Place into your greased loaf pan.
- Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Remove from loaf pan and eat within 3 days.
Notes
- Mixing in a tbsp of greek yogurt at the end helps keep the loaf nice and moist.
