This healthier banana bread recipe with sea lettuce will offer a soft flavour and is iron rich and iodine rich, thanks to the addition of sea lettuce.


  • 2 large ripe banana’s (mashed)

  • 1/2 cup honey or maple syrup

  • 1/3 cup coconut oil (melted)

  • 2 eggs

  • 1/4 cup of milk (any preference)

  • 1 tsp baking soda

  • 1 tbsp vanilla essence

  • 1/3 cup coconut oil (melted)

  • 1 tbsp sea lettuce

  • 1/2 tsp salt

  • 1 1/2 flour (wheat flour or standard)

  • 1/2 tsp cinnamon

  • 1/4 cup chocolate chips (optional)


  • Preheat oven to 170 degrees and oil a 9×5-inch loaf pan.
  • Whisk the egg, coconut oil, vanilla essence, honey together in a large mixing bowl.
  • Add in the mashed banana and milk. Using a spatula or bigger spoon stir in the sea lettuce, salt, baking soda, cinnamon and flour until combined. Be careful not to mix. 
  • Fold in chocolate chips (optional)
  • Place into your greased loaf pan.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Remove from loaf pan and eat within 3 days.
