The secret ingredient to nutritious and delicious banana bread is sea lettuce which adds protein and an excellent source of iron. Adding Sea Lettuce is a wonderful way to improve the nutritional content of your afternoon snack.
Step 1) Preheat oven to 170 degrees and oil a 9×5-inch loaf pan.
Step 2) Whisk the egg, coconut oil, vanilla essence, honey together in a large mixing bowl.
Step 3) Add in the mashed banana and milk. Using a spatula or bigger spoon stir in the sea lettuce, salt, baking soda, cinnamon and flour until combined. Note** Mixing in a tbsp of greek yogurt at the end helps keep the loaf nice and moist. Be careful not to mix. Fold in chocolate chips.
Step 4) Place into your greased loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Remove from loaf pan and eat within 3 days.
