What is sea Chicory Seaweed?

Part of the ‘red’ seaweed group, Sea Chicory is well known for it’s delicate, colourful appearance, jellifying properties, mild taste and crunchy texture. It’s most often used in salads and as a nutritious garnish to a meal.

Japanese people call it ‘yanaginori’, and it is one of the traditional ingredients in Peruvian food. Sea chicory is most commonly used in salads, and it makes a nutritious garnish which boosts the nutritional profile of a meal.

What are the health benefits of eating sea Chicory seaweed?

Classified as a red seaweed, Sea chicory contains naturally occurring carrageenan, a jelly with soothing effects on the digestive tract when consumed as part of the plant. Sea Chicory provides an abundance of vitamins, minerals & trace elements. It is believed to have antiviral, antifungal and antibacterial properties and is said to support immune function.

How do I cook sea chicory seaweed?

What looks like a mass of dried wiry hair rehydrates to resemble pretty, colourful lace.  Red and Green sea chicory can be mixed to create interest.  The taste is mild and the texture slightly crunchy. It makes a striking edible garnish for seafood & raw vegetable platters or fresh salads, and adds colour, texture & nutrition to soups & stews. Try it in coconut milk, combined with marinated fish or in tuna poke, a salad from Hawaii.

Because of its high content in seaweed jelly, Sea Chicory is an alternative to Irish Moss to set puddings. When using Sea Chicory in salads, the dressing should be added when ready to eat as it may draw out its natural jelly, making the seaweed feel slippery.

Warning – cooking with sea chicory

There has been some evidence that Carrageenan, a gel compound naturally present in Sea Chicory, may decrease blood pressure and slow blood clotting. Caution is advised if the seaweed is consumed regularly while being treated for high blood pressure or using medication that slow blood clotting. Please check with your health practitioner if you have any concerns.
